Mini Meals: First Pancakes!

We have generally been giving Violet eggs, toast, or cereal for breakfast as the instructions on the pancake mix tell you to add milk. Well, light bulb moment people! We were having dinner the other night with another couple whose son is allergic to dairy and they suggested substituting water for the milk. (Why didn't I think of that?) The Hubster was a little skeptical, but guess what - they still taste like pancakes! We also found a 'buttery spread' that Violet can eat. And it isn't half bad either. Earth Balance buttery spread is free of dairy and contains soy oil (which Violet can have), but not the soy protein (which she can't have), so Violet can now have 'butter'! I was sooo thrilled when I found this. It opens up a lot of new doors for us with meals. Maybe I can even use it to make icing for Violet's birthday cake? What did your little ones eat this week?

  1. my son was allergic/sensitive to both soy and dairy for a while- we found another earth balance that is soy free- and I think it tastes better than the original. It is in a red container- we usually found it at whole foods.

  2. Can she have almond milk? I have substituted that in pancake mix with some success. I usually added a little vanilla to disguise the almond taste, though, so not sure if that would violate her restrictions.

  3. Congrats on Violet's pancakes! :) My oldest daughter had food allergies (she fortunately "outgrew" them) and it looks like her baby sister is following in her footsteps. I know how exciting it is to find new foods that they can eat. We use the same butter too!

  5. Thanks for the suggestions on the almond milk! We haven't tried any nut products with her yet - I guess peanut is the main one that they recommend waiting until age two. I'm guessing almond isn't as big of an issue so we'll have to check with her allergist on that. Our doctor did suggest coconut milk so I suppose we could experiment with that as well. We really don't have any personal experience with either so I think we're just afraid to try them! Glad to hear some of you have had good experiences!

  6. Also I'm going to look into the other Earth's Best products for sure! We don't have a Whole Foods around us but it's got to be available somewhere, right?
