Life is Better with Limes

Want to serve something besides burgers and BBQ chicken this July 4th weekend? Well, I have a simple and tasty marinade for you to try. It features the light, zesty lime (which you may or may not use for an accompanying margarita or Corona). It really tenderizes the meat and makes it extra juicy. We especially like it with skirt steak, but chicken is a nice choice, too. You can serve it in a fajita or alongside Southwestern cob (recipe below). Enjoy!

Lime Marinade

Ingredients
  • beef skirt steak or chicken
  • 2/3 cup soy sauce
  • 1/4 cup lime juice

Instructions

  1. Marinate meat for 2 hours.
  2. Grill.
  3. Let the meat rest before slicing it thin and serving.


Bonus recipe: Southwestern Cob (also uses limes)

Ingredients
  • corn on the cob, shucked
  • lime juice
  • chili powder
  • salt and pepper
  • crema Mexicana (found near sour cream in your grocery)

Instructions

  1. Spritz lime juice over the raw corn on the cob.
  2. Rub on chili powder, roughly 1/4 tsp. per cob.
  3. Repeat with salt and pepper to liking.
  4. Grill for ~10 minutes.
  5. Pour on crema Mexicana and serve.
