What to do with such yummy seafood? Grill it, of course! We found a recipe for a spice rub, and it was the perfect compliment to the mahi mahi. I bet it would also be tasty on shrimp or chicken. (Note: It really is important to use a cast iron skillet to get the crust just right. We put ours directly onto the grill.)
Ingredients
- 3 tablespoons paprika
- 1 tablespoon onion powder
- 1 pinch garlic powder
- 1 teaspoon ground white pepper
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper, or to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon celery seed
- 1 tablespoon kosher salt
- Blend spices and coat fillets. Let stand at room temperature for no more than 30 minutes.
- Heat cast iron skillet over high heat and add oil.
- Cook three minutes per side.
