The Perfect Blend of Spices

A few weeks ago my fiancé, Nick, traveled to the Outer Banks with his buddies to celebrate his final few weeks of bachelorhood ... and to do some deep sea fishing. They each returned with over 20 lbs. of fresh fish!

What to do with such yummy seafood? Grill it, of course! We found a recipe for a spice rub, and it was the perfect compliment to the mahi mahi. I bet it would also be tasty on shrimp or chicken. (Note: It really is important to use a cast iron skillet to get the crust just right. We put ours directly onto the grill.)

Ingredients
  • 3 tablespoons paprika
  • 1 tablespoon onion powder
  • 1 pinch garlic powder
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper, or to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon celery seed
  • 1 tablespoon kosher salt
Instructions
  • Blend spices and coat fillets. Let stand at room temperature for no more than 30 minutes.
  • Heat cast iron skillet over high heat and add oil.
  • Cook three minutes per side.
